Dominio de Miros 2019 is a highly expressive red wine produced by Bodegas Peñafiel, located in the Ribera del Duero DO, Spain This wine is born from a rigorous selection of century-old bush vines, with bunches chosen berry by berry. The harvest takes place late, generally in mid-October, and the grapes are kept in cold storage for 48 hours at less than 7°C to preserve fruity aromas. After selection, alcoholic fermentation takes place in new 500L French oak barrels for approximately 20 days under temperature control. A cold pre-maceration of about 52 hours is carried out in an inert atmosphere, followed by malolactic fermentation in new 225L barrels where it remains for 45 days, accompanied by gentle weekly bâtonnage. Subsequently, the wine ages for 36 months in new, very fine-grained French oak barrels, consolidating its character and elegance.
