The must ferments in an open 1,500-liter foudre without temperature control and, when spring arrives, it spontaneously generates a thin layer of yeast that covers the surface of the liquid — the so-called flor veil. The wine remains under this veil for \u003cstrong\u003e11 months\u003c\/strong\u003e. Finally it is bottled without fining or filtering.\u003c\/p\u003e\n\u003cp\u003eAn elegant, complex wine with many nuances. A limited production rarity that is unquestionably worth trying.
