The climate and environmental ecosystem where Diplomático's sugarcane is grown provide ideal conditions for its growth thanks to the seasonality and humidity of the area.\u003c\/p\u003e\n\n\u003cp\u003e The sugar cane used to produce Diplomático rums is obtained locally in Venezuela, sent to sugar factories and transformed into sugar cane molasses to begin the rum-making process.\u003c\/p\u003e\n\n\u003cp\u003e Fermentation is the process by which the sugar in molasses is transformed into alcohol.\u003c\/p\u003e\n\n\u003cp\u003e Since most aromatic compounds are created during fermentation, this part of the process is crucial. The molasses is fermented for at least 24 hours to obtain a highly aromatic liquid with an alcohol content between 6% and 8%.\u003c\/p\u003e\n\n \u003cp\u003eThe distillery houses a number of unique systems for both continuous and batch distillation. These include pot still distillation, batch kettle distillation, and column distillation. This variety is key to achieving the unique flavor profile that characterizes Diplomático. It allows for the creation of different light and heavy rum profiles which, once aged and blended, give our rums a complexity comparable to the finest whiskies in the world.\u003c\/p\u003e\n\n\u003cp\u003e The unique combination of batch kettle and pot still distillations is at the heart of the Diplomatic style, which is complemented by column distillation to balance its profile.\u003c\/p\u003e\n\n \u003cp\u003e\u003cspan\u003eAll Diplomático rums are aged in oak barrels to achieve the desired flavor profile for each of our rums. Most of the flavors and aromas found in rum are created during the aging process. Diplomático primarily uses ex-bourbon and ex-whiskey barrels to age its rums. Once the rums in each barrel have reached optimal maturity, they are blended in different proportions to obtain the desired flavor profile in each expression.\u003c\/span\u003e\u003c\/p\u003e\n\n\u003cp\u003e \u003cspan\u003eBlending is the secret to fine rum. It allows the use of many different types and styles of rum to create a particular blend.
